Rercy’s Mince Pies

The cheapest mince pie is a home-made one. Buying ready-made mincemeat and pastry can conserve the cash and save you hassle.  For the cheapest, easiest, light fluffy mince pie option, try these festive gems.

Makes 12 mince pies

Ingredients

  • 1 pack of medium size pastry cases (Jus Rol vol-au-vent are ideal), defrosted if required
  • 1 jar of mincemeat
  • 1 egg

Directions

  1. Preheat the oven to the instructions on the pastry pack.
  2. Place frozen pastry cases on a baking tray 1cm apart and carefully glaze rim and base with beaten egg.
  3. Place tray in top half of oven. After 8 minutes turn tray around and continue baking for a further 5 minutes.
  4. Take tray out of oven and fill each case with one large tablespoon of mincemeat.
  5. Return to the oven for a further 4 minutes until mincemeat is cooked through.
  6. Cool on a wire rack to maintain crispness.
