Seabass with Puy Lentil Salsa

puy-lentil-salsaPuy lentils are good friends with so many other ingredients, including white fish. Back before Delia Smith starting bunging powdered mash in the microwave, she published a beautiful recipe for Sea Bass with Puy Lentil Salsa.

This is fast, easy, and healthy dish, using cheap and readily available ingredients. If sea bass is a bit pricey, any nice meaty white should do. I  make this quite often and have substituted haddock and sea bream.

I first saw it in her “The Delia Connection: Fish” cookbook, which I got as a Christmas present from my mum, but you can check it out at Delia online.
