Smoked Mackerel Salad
I met many outstanding food producers at the Bloom event last weekend. One of these was McConnell’s Gourmet Smoked Foods, a small business run by the Sweeney family, producing smoked fish and poultry.
Their smoked mackerel, priced at just €3 for two big chunky fillets, was superb. Full of flavour without being overbearing, while also moist and fresh, this is a great value way of filling up on those all essential Omega-3 fatty acids.
The Sweeneys gave me some to take home with me. I chopped it up and served it in a simple salad with a basil vinegarette (courtesy of another great food producer I’ll be writing about in coming weeks).
