Val’s Kitchen in Prudence Magazine

One of our favourite Irish food bloggers, Valerie O’Connor of Val’s Kitchen, has a feature in this month’s Prudence magazine on ‘savvy snacks’.  It’s all about tasty lunches that you can make at home for a reasonable price, or to coin a phrase, ‘cheap eats’.

There’s a sneak preview on Val’s blog of a really delicious-looking roasted pumpkin soup.  Pumpkin soup is one of the Best Things Ever, and pumpkins are now coming into season.  You’ll get good deals on butternut squash in Lidl, and pumpkins are usually very cheap around Hallowe’en.
