  1. Cornbread, beans and chili are not even TexMex. Cornbread is American (two varieties, sweet northern and savory southern). Chili is also American and there are many varieties: Texas red, Cincinnati-style, Louisville-style, chile verde, etc.

    Most enchiladas in restaurants are of the TexMex variety, but enchiladas themselves are very Mexican. A typical Mexican preparation would involve corn tortillas dipped in a chile sauce and sprinkled with queso fresco cheese.

  2. Hi Bill. I do need some Mexican tips, cheers. By chili I mean the hot spicy peppers and by cornbread I meant tortilla. Clearly, I need to get over to this festival pronto! 🙂

  3. Ah, well that makes more sense! 🙂 I’ve looked at the menu and it seems very authentic. I lived in Austin, TX for nine years before moving to Dublin and really miss both the Mex and TexMex food.

  4. Went to this today and was quite looking forward to it as I love Mexican food – we went for the lunch menu and were all pretty disappointed. Portions were small, the food wasn’t of great quality and my enchiladas weren’t actually enchiladas – 2 of our group have actually been to Mexico a few times so do have some idea of what the food is like. Overall it wasn’t anything to rave about.

  5. I agree with Siobhan, very disappointing food, and the staff at the Hilton nearly drove us crazy asking if everything was all right! Obviously just a promotional thing for them.
