  1. I was out at Dunnes at lunch time, and it doesn’t seem to me that shelves were less stocked than usual. Nor did people seem to panick. Most of us will have supplies of dried and tinned food, and may be a few things in the freezer that should last until the weather improves. If not, well, we’ll eat the cat 🙂
    Warming recipes: it’s hard to beat soups. My fav one: sweet potatoes, carrots and red lentils. Just sautée some chopped onions in a large pan, add chopped carrots, sweet potatoes and stock. Simmer for about 15 mn, then add a cup of red lentils and simmer for another 10 mn. Can be pureed or chunky

    Shopping in Dunnes the other night I did notice the shelves were more sparse than usual, but Id say it has more to do with the bad weather affecting deliveries than Daily Mail readers panic buying.

  4. If I can get off my hill tomorrow, I’ll try to make it to the store, but that’s more for peace of mind than panic. A bacon, leek and Camembert risotto is a real rib-sticking winter dish (http://dinnerdujour.org).

I reckon a lot of us could do financially without a week of shopping at the moment and Im sure most of us would find enough to eat in our houses for that week between tinned goods, pasta, rice and pulses and frozen foods. In fact this might be a great idea to spring impromptu on your readers-make them live off what they have for a week!

    At the moment if I wasnt allowed shop Id definitely have enough veg for loads of soup, arborio rice, dried mushrooms and parmesan for risotto and god knows what lies in that freezer of mine!

  6. Sounds like a good challenge Dee, might open a seperate post on this. I’m looking at more red lentils, some onions, and potatoes: some sort of curry is in order.

  7. Haven’t bared the shops since i came back after new years so its been a diet of beans, tinned tuna, noodles and a few handy packs of part baked white bread rolls (only 59c for 4 in Aldi). And the scary veg which last in the fridge for weeks – carrots and broccoli made a lovely tasty soup with a handful of rice thrown in for substance. Its great getting to use the food in the back of the press. Not looking forward to having to restock again though.

  8. We live out of the freezer for the last week of the month until payday. Its great and forces you to dig out recipies and herbs you haven’t used in ages.

  9. I reckon you have people to join your challenge, you’ll have to throw it on us randomly though so that we dont stock up beforehand!
    Looking at my freezer again I think I may be down to nothing by the weekend and apparently (according to breakingnews.ie) this cold snap may last till March!

  10. This is a great recipe and uses items that are tinned (tomatoes), longlife (lentils) or frozen (colly) – (a cup is approx 250ml) – I make it using green lentils as red I find go mushy – but the recipe doesn’t ask for a specific colour…

    Spicy Lentil Dal

    1 tbsp olive oil
    1 c onion, diced
    1 tbsp fresh ginger, minced
    1 tsp cumin seeds
    1 tsp turmeric
    1/2 tsp crushed red pepper
    4 cloves garlic, minced
    2 c cauliflower florets
    1 can (14.5 oz) diced tomatoes, drained, juice reserved
    2 1/4 c water
    1 c dried lentils
    2 tbsp lime juice
    1 tbsp fresh coriander, minced
    3/4 tsp salt

    Heat olive oil in large pan. Add onion, ginger, cumin seeds, turmeric, crushed red pepper, and garlic. Saute for 2 minutes. Add cauliflower and can of tomatoes (drained, reserving liquid) to pan, and stir. Saute for 1 minute. Add tomato juice, water, and lentils. Bring to a boil, stirring well. Reduce heat, cover, and simmer 35 minutes, or until lentils are tender. Remove from heat, stir in lime juice, cilantro, and salt.
    Serve over basmati rice.

  12. Excellent recipe BB, thanks. I added 250ml vegetable stock instead of water, fried the onion and garlic with some fresh chilli, and substituted the cauliflower (chewy pig brains) with broccoli. Delicious, thanks.

  14. Nanzolie- Just made the sweet potato soup, absolutely fab my new favourite and the lentils make it very filling. i had it with a slice of soda bread but i didnt need the bread it was so filling.
