Recipe: BBQ Lobster

938380_80574576It’s due to be Johnny roaster cakes this weekend and going on the last three years I’d say that this maybe the best part of the summer – hopefully I’m wrong. Well, as a precaution I urge you to get outside and strike-up the BBQ.

To start off in style, I’m planning on a posh lobster BBQ for a couple of people. Well it will look posh but I’m actually picking up a few lobsters for €8.99 a piece in Lidl, these are not the biggest fellas but they are completely delicious.

For me, lobster is the ultimate food and has the most distinctive and luxurious taste.  I’m keeping it simple and serving it with a garlic butter sauce, salad and baked potatoes. I think I might go all out and have some Pimm’s on the go. Roll on the weekend.

What do you consider a posh BBQ?

BBQ Lobster with a Garlic Butter Sauce

Serves Four

Ingredients:

  • 4 lobsters
  • 200g melted butter
  • 4 cloves garlic, finely minced
  • 4 tbp chopped fresh parsley
  • ½ tsp salt

Instructions:

  1. Thaw the lobster in fridge over night.
  2. Heat the barbecue to a medium heat.
  3. In a large pot, par-boil two lobsters at a time in a covered pot for five to seven minutes.
  4. Remove lobsters from the pot, turn them upside down on a cutting board, and slice them in half lengthwise from the tail to the top of the head. Use a sharp knife to split the claws only on the side that will be turned up on the grill.
  5. Place each half lobster, shell side down, on the pre-heated BBQ.
  6. Baste the exposed lobster meat with the garlic butter and sprinkle with salt and pepper.
  7. Grill lobsters for about 8 to 10 minutes. When the meat is white and opaque and the shell has turned bright red they are ready to eat.

I’ve seen the Lidl lobsters. They are already red, so does that not mean that they are already cooked? Only really need to re-heat them?

Very good point Dee, it is already cooked but you can still BBQ it, just leave it on the grill for less, keep an eye on it and be sure to keep the lobster basted so it doesn’t dry out.

For Dublin based cheap eaters, you can get large, fresh lobster tails out in Howth for €4.50 (at least you could a few weeks ago) each. Great value, and suitable for tasty BBQ treats.

Very intruigued about the Lidl lobsters. Since they are already cooked, are they best used for salads etc? Do you know where they come from?

The lidl ones are tiny, tasteless and just make me crave the real thing even more.

For me, a posh bbq is monkfish and thyme kebabs and venison burgers. Suits you!
