David’s Amazing, All Purpose Sauce

herbsMyself and Snack Box stayed with our friends Rercy (she of CheapEats writing fame) and David on their farm in West Wicklow last week, and both gorged ourself on Dave’s amazing, all-purpose, good with everything sauce.

The recipe is so simple. Take about 250ml extra virgin olive oil, add 2-3 cloves of raw garlic (depending on how much you like garlic), add about a tablespoon and a half of cider vinegar or white wine vinegar, and salt and pepper to taste. Take a handful of fresh herbs – David used basil, thyme, parsley and oregano – and throw half of them into the mix. Blitz it all. Chop the remaining herbs and add to the mix for texture.

Over the week, this served as a salad dressing, a pasta sauce, and a flavouring for omelettes. It also goes really well with eggs of any type, or as a sauce for vegetables. It was so good that we started dipping crisps in it. Guaranteed to liven up any meal.

Not quite on topic but speaking of great tasting things…..just wondering if anyone knows anything about the Great Taste Awards 2009? Never heard of them before but just wanted to know if you think they are worth their salt in terms of the products the recommend – thinking of trying some of the winners on a little taste quest this weekend!!
