Parsnips are a down-trodden under appreciated vegetable. I think they’re sweet, nutty, versatile, and very fresh at the moment. They’re on special offer in Tesco at the moment, apparently reduced by 33% from €3.99-€2.66.
Meanwhile, a 10kg bag of roosters in Dunnes is half price at €3.49. A 2.5kg bag of roosters will set you back €3.99 in Tesco. Good value if you have a big family.
Try this recipe for Curried Parsnip and Potato soup. This freezes well.

Nice recipe Peter, although I’m going to have to disagree with you about parsnips. Too many lukewarm claggy mashed carrots-and-parsnips with Sunday dinner at my Granny’s house during my childhood…never recovered from that really!
I think the only thing to do with them is to coat them in honey and roast them, or curry the holy crap out of them as in the recipe above.
