Sounds fabulous. Why does he not salt and stand the auberignes first?
have you been to Ottelenghi in London , I think there are 4 of them I was at the one in Islington … amazing!!!
I don’t know why he doesn’t, I always salt them to get rid of the bitter juices, they are very acidic otherwise.
I haven’t been Hockeysticks but I’m planning a trip to London soon and I’ll check it out.
