At the Bloom in the Park festival in June, I met the lovely Silke Cropp. A charming, smiley, redhead from somewhere in Northern Europe (sorry Silke!), she produces the delicious Corleggy Cheese. The cows cheese was perfect, and the goats cheese managed to be even more perfect. Silke is offering one-day Cheese Making classes in Corleggy, Co. Cavan for €150, including wine and lunch, on August 9, 16, and 23. That’s my budget for the month of August after I pay my rent, so I can’t make it along myself. However, I reckon it’s an art worth knowing and one that could potentially save you a bit of money if you’re one of those people who snacks on cheese instead of chocolate. Meanwhile, this weekend, the Organic Centre in Rossinver, Co. Leitrim, are holding a one-day course on raw-food cooking (€90 including a light organic lunch). I know a few people who have adapted the raw food lifestyle, and I do like Natasha’s Living Foods, but I don’t see myself going down this avenue anytime soon. Call 071-9854338 for more information.

  2. I went to the cheese making with Silke yesterday. It was a fantastic day. Cheese making is a slow, therapeutic process with plenty of time between stages for chatting and coffee. We all left with our bellies full of fantastic food and our brains bursting with knowledge. I I came home with my 1kg ‘baby’. I’m looking forward to the return journey to Corleggy at the end of November to taste the end result. If anyone has an interest in food I would highly recommend this class for next year, it was worth every penny.
