  3. I think Corrigan himself is leading the revolution in Irish food, my french friends have heard of him. We don’t have a history of fine food in this country or of Art, but we can start it now and then it becomes part of our culture and then it’ll become part of our identity and then it’ll become our heritage. Passion and informed and well formed cooking begets a change in the way we think of Irish food and we deserve that. I’ve not eaten in Bentleys yet, but would love to and fully intend to at some point as I follow Mr Corrigans recipes at home. Thanks a million, what a great idea, Eileen x

  4. I’ve recently been told I’m allergic to MSG and I’d love to know which foods contain it and which ones don’t. I’m sure I’m not alone in that! PS mmm Bentley’s.

    I’d like to see more of a feature for “men”, I know it may sound silly but I don’t know many men that can cook at all, and in soceity where there is a high percentage of both husband and wive’s out working. The responsibilty of the family dinner seems to fall to the woman! I know my partner can cook an egg’s so enlighten him please when it come’s to an idea, what igredients and time mangement so the meal is warm and ready on time!

  10. I agree with Melaine (comment 7), a running commentary on seasonal foods would be good to see.

    i would also like to see promotion of retailers and restaurants that deal in fair trade and/or organic foods.

    When reviewing restaurants etc. I would like to see the owner/chef discuss where they source there food from.

  11. I’d like to see features on how to prepare meals from various historical time periods as accurately, but realistically , as possible – maybe how to prepare a Roman feast for a dinner party or a meal from ancient Egypt?
    Failing that, features on how to choose the right wines are always welcome. And a feature on recipes featuring tomato ketchup as the main ingredient, just to irk the food-snobs.

    it seems to be men of a certain generation that can’t cook!! II’d just like to clarify that, essentially 90% of men in their late teens-mid 30’s.

  13. I’d like to see features on menus for dinner parties. It can be hard to transfer the meal you eat in a restaurant to the dinner table, but alot of dinner party menus are very boring and predictable.

    Would LOVE to try Bentley’s!

  14. Some information about cuts of meat and cooking methods and cooking times for meat. Features on fruit and veg currently in season and lists of what’s in season when would also be good.

    Also, you could feature different restaurants and cafes and show different selections from their menu to accommodate people trying to eat out but follow a particular eating plan, such as low fat, low cholesterol, vegetarian.

  17. I would love to see a feature from a well known chef about how they came up with the concept of and the execution of one of their signature dishes. I’m a stickler for sticking exactly to a recipe and not diverting an inch from it and I would love to know how a chef’s brain works. Really what I’m asking to see, is how the creative process works for chef. Is it an initial raw ingredient they see and think “we could do something with this”, how much trial and error goes on, etc. I think not only would it be informative but it would be entertaining too.

    I haven’t yet been to Bentley’s but would absolutely love, love to win this prize.

  19. I would like to see an emphasis on seasonal Irish produce and advice on using less popular cuts of meat and fish. Some reviews of cookery schools/ classes would be nice.

More on the science behind cooking – e.g. why add potatoes to cold water and then bring it to the boil vs. adding pasta to already-boiling water; effects of different cooking methods/heat on nutrient loss and texture; chemical reactions in baking, etc. I research a lot of this kind of thing myself but it doesn’t occur to most people I know until I suggest it and then they get curious. Features like that could spark off a whole new series of columns!

  22. I would like the magazine to contain information on where to buy good quality and good value ingredients for the recipes that they publish.
    Low cost recipes would also be a good idea and perhaps discount vouchers

    1. Best value restaurants
    2. Reviews – but not just one review, why not bring in the average scores from somewhere like menupages.ie – a more balanced view
    3. Recipes – midweek quickies versus weekend masterpieces
    4. More wine

  24. I’d like to see a weekly feature with one basic ingredient, e.g. “salmon” one week, “broccoli” the next and “steak” the week after, and then have an imaginative but simple recipe to cook that ingredient, something that the average time-poor person could do without too much hassle.

    I’d also like to see a feature on baking recipes (e.g. scones, brown bread, tarts) as it is becoming a lost art!

  26. I’d like to see recession-friendly restaurants that are being innovative with cooking old style food or using slow cooking rather than just chucking in an oul house glass of wine!
    I also used to be a huge fan of Zagats in NYC – team of reviews from the public – not just complaining rants but descriptions by food lovers.
    And – why is there no happy hour/tapas combo anywhere?!
    Also, yummmm Bentleys. Fingers crossed!

  28. I’d like to see more of a focus on seasonal produce, ie letting me know exactly what is in season at any given time and recipies for that seasonal produce. I’d also like to see features on cooking and buying food for people with food allergies and sensitivities. Thanks

  29. I’d like to see a range of recipes, some of which are simple (not too many ingredients to find, no advanced techniques) and some of which are more complicated (for when you have the time and want to stretch yourself)

    I would like to see a regular feature on the changing food and cultural landscape of Ireland, think the emergent china town along parnell st, what is happening there, review some good restaurants, or cover some of the new polish rest and shops, and so on, areas that are being changed through food, and that have now become not only a culinary outing but a cultural one as well

  34. well like all the other posters, i like competitions! in magazines i like short articles e.g. what a chef has in his fridge (at home), what is his death-row meal etc. or getting readers to road-test recipes from new cookbooks.

A great food publication should have a good mix with balance in everything – luxury and low-fat, expensive and affordable, 5 minute meals and 3 hour meals, etc A weekly list of the in-season fruits and veg, maybe a small ‘grow your own herb box’ column, how to choose herbs and spices and how best to use them, reviews of cookery courses, a country each week and their signature dishes……I want to work with this magazine now!!

  36. I’d like to see more “fast food” recipes – so that I don’t have to slave for hours over a hot stove after a hard day’s work! I’d also like more budget recipes, or at least recipes where the ingredients are costed …… also with ingredients that are readily available so that I don’t have to traipse to specialist shops during my lunchtime!

  37. I would love a magazine that gives good honest opinions of nationwide restaurants. Also a section with Special Offers & Meal Deals…… and a section with simple recipies for cooking if you’re short on time, have a bit of time & have loads of time.

  38. I think that getting kids involved in the kitchen at a young age is a great way to entertain them and to instill in them the skills to create tasty, nutritious meals. For this reason, I’d love to see more child-oriented articles in food magazines with tips on the most fun ways to include your kids in the culinary process. Also, I’d love to see more on putting leftovers to good use, as well as the do’s and don’ts of freezing food.
    Also, honest reviewers who aren’t afraid to say that a restaurant was pants or crap value are always welcome, as I hate being disappointed when I go out to eat!!

  39. I’d love a feature in a magazine where you could request recipes of dishes from restaurants. Also, I’d love if the recipes in the magazine weren’t too “cheffy”, but were things that could actually be prepared at home.

  41. I’d like to see food magazines collaborate with supermarkets to come up with fine recipes, using interesting ingredients and then to offer these ingredients at a special price in their shops. Preferably using seasonal ingredients or different cuts of meat (i.e. cheaper!) the average shopper wouldn’t buy or have available to them in the shop.

  42. I’d like to see features on slow food and Irish organic farms. Explain what all those assertions of “certified organic” mean and what exactly organic farmers are doing/ not doing to justify the extra cost of organic food.

  43. I’d really like to see a detailed section on new special offers in restaurants and also some great ideas re using leftovers and making sure you waste no food in your home i.e how could you freeze veg/fruit/meats so that they can be used again/at a later date

  44. I’d like to see some good quick options when cooking for one, as most recipes focus on the family or dinner party scenario. Cooking for one person can sometimes seem like a lot of effort leading swiftly to unhealthy quick fix or take out options. Other things I’d like to see – one pot cooking ideas (hate washing up), storecupboard ideas (for when I’ve forgotten to shop), using seasonal produce, info on whether recipes are good for freezing, how to shop for good cuts of meat, info on local / national organic food suppliers…

    What can I say? I want it all…

  45. I’d like to see quick and easy recipes for the use of seasonal food. Also i would like to see reviews of current restaurants that are doing good value meal deals for the weekends. Most of the deals around seem to be based around lunch which is a problem if you dont work in town so articles featurings restaurants with deals at the weekends would be good and also reviews of restaurants in the suburbs would be beneficial.

  48. I like to read food magazines to get recipe ideas and product inforation, to hear about local producers and their produce. I enjoy a lively restaurant review and information about food issues and techniques. It is nice to read about food and travel. Finally it is nice to be kept up to date on foodie events. Ireland is developing a food culture, this needs to be supported.

    I’m a sucker for “5 ways with…” articles that feature an ingredient, and show you 5 ways to use it!

    I also love love love cake recipes, especially ones from contributing chefs!

  50. I would love to get more recipes from food magazines, based on the ethnic dishes from different countries, which means I get to try something different.

    Also keeping up to date with food events would also be great, which also gives an opportuntity to try local fresh produce.

    Resturant reviews are always worth a read, but one person’s hell is another’s heaven, so I usually try a place even if the review is not good, if I think it is worth a go.

    competitions for a night out like found in today’s magazine are also great, because in these depressing times something for free is even more appreciated!
