Recipe: Spicy Chicken Wings with Blue Cheese

714265_43665326Dunnes are doing a great deal on organic chicken wings at the moment. For €4.99 there are enough wings for three to four people and married with a blue cheese dressing, this is one tasty dish.

I particularly like the ‘Spicy Chicken Wings with Blue Cheese Dressing’ recipe from the book ‘Falling Cloudberries’ by Tessa Kiros.

As usual, Dunnes have some excellent wine deals, and these wings will go great with a bottle of ‘The Delivery’ by Douglas Green, reduced from €11.99 to €5.50 and an exceptional bottle of wine for this low price.

Spicy Chicken Wings with Blue Cheese Dressing

Ingredients:

Dipping sauce:

  • 100g Firm blue cheese
  • 250g plain yoghurt
  • 1 tablespoon lemon juice
  • 1 garlic clove, finely chopped
  • 1 tablespoon olive oil

Sauce for coating wings:

  • 85g butter
  • 1 tablespoon cider vinegar or wine wine vinegar
  • 2 teaspoons tabasco sauce
  • ½ teaspoon sweet paprika
  • 6 chicken wings
  • Plain flour, for dusting
  • Olive oil, for frying
  • 6 celery stalks

Instructions:

To make the dipping sauce:

Mash the blue cheese with a fork and mix with the yoghurt, lemon juice, garlic and olive oil. Season well and whisk with a fork.

To make sauce for coating wings:

Melt the butter in a saucepan until sizzling, then add the vinegar, tabasco, sweet paprika and a little salt and let it bubble up for a minute or two.

Pat the wings with flour and season. Fry in oil until they are deep golden and completely cooked through. Transfer them onto kitchen paper to absorb the excess oil.

Toss the wings in the butter coating and serve immediately. Serve the blue cheese sauce and celery on the side for dipping.

  1. Nice! I would prefer to roast the wings in the oven though, already coated with the sauce…

  2. I don’t find that the sauce stands up to baking that well so what I do is dust them in flour, bake them and then when they are nice and crispy I toss them in the sauce and serve.
